From snoek basted with apricot jam, boerewors rolls topped with peach chutney and ribs smothered in sticky plum sauce, South Africans know how well stone fruit goes with our favourite pastime – a braai! All through the summer months there’s a steady supply of locally grown peaches, nectarines and plums. While they are juicy and delicious as whole fruit enjoyed at any time of day, there’s so much more we can do with this versatile fruit to elevate our entertaining and family meals.

We are so fortunate to also have access to farm-fresh peaches, nectarines and plums throughout the summer months. Of course, they are delicious in desserts from ice-creams to crumbles and cobblers. But stone fruit also pairs wonderfully in savoury dishes, from salads and roasts to curries and braais.”

Peach and mozzarella braai broodjies

A crispy toasted sandwich with melted mozzarella and a delicious fruity twist. Impress your guests with these toasties at your next braai!

Serves 4

Ingredients

  • 8 slices sourdough bread
  • Butter, for spreading
  • 16 slices mozzarella cheese
  • 5 ml (1 tsp) fresh thyme leaves
  • 2 ripe peaches, cut into thin slices
Method
  1. Butter one side of each slice of bread. Place four slices on a board butter side down.
  2. Arrange two slices of mozzarella on each slice of bread, followed by the thyme leaves.
  3. Arrange the peach slices on top followed by another layer of mozzarella.
  4. Place another slice of bread on top ensuring that the buttered side is facing outwards.
  5. Cook the sandwiches over the coals until golden brown and the cheese has melted.
  6. Slice and serve immediately.
