Chicken Tortilla Soup

Serves 4–6

2 Tbsp olive oil
1 onion, diced
1 red pepper, chopped
3 cloves garlic, grated
½ tsp dried red chilli flakes
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried origanum
1 tsp tomato paste
1 x 400 g can chopped tomatoes
4 cups chicken stock
2 cooked chicken breasts, shredded
1 cup fresh corn kernels
1 x 400 g can red kidney or black beans, drained
juice of 1 lime
salt and freshly ground black pepper to taste

TOPPINGS
crispy pan-fried tortilla strips
sliced avocado
grated mature cheddar cheese
sour cream or Greek-style yoghurt
fresh coriander
sliced jalapeños
lime slices

WHIP UP THE SOUP
1. Heat the olive oil in a large saucepan and sauté the onion and red pepper until soft, then add the garlic, chilli flakes, cumin, paprika and origanum.
2. Stir in the tomato paste and cook for 1 minute, then add the chopped tomatoes and chicken stock. Bring to a simmer.
3. Add the shredded chicken, corn kernels and beans, and simmer for 10–15 minutes.
4. Taste and adjust seasoning with the lime juice, salt and black pepper.
